Position: Manager - Food Safety & Hygiene
Department: Food & Beverage - Grand Lisboa Hotel

Requirements: • Bachelor degree certification in Food Safety & Hygiene or related disciplines
• Minimum of 5 years working experiences in hotel and restaurant environment
• Must have a complete knowledge of Food Hygiene and Safety Procedures
• Proficient in Microsoft Office
• Able to multi-task and work in a fast-paced environment
• Diligent attention to detail and safety
• Proficient in both written and spoken
Responsibilities: • Manage overall health and safety, food safety, standards within the hotels (mainly focused in kitchen operations)
• Implement safety risk management practices in line with the company’s health and safety policy
• Actively reduce guest complaints relating to health and safety and food hygiene
• Audit the hotel to confirm Health & Safety/Food Hygiene compliance
• Train Health & Safety /Food Safety issues to managers, supervisors and colleagues
• Liaise with outside contractors and sales staff on matters of Health & Safety and food safety
• Assist the facilities department in monitoring contractors and enforcing Health & Safety standards as required
• Carry out food poisoning investigations as required and analyzing Hazard Analysis information
• Monitor and document results following safety audits
• Monitor and interpret microbiological results from food sampling of all hotel kitchens and advise accordingly
• Tutor basic food hygiene courses for relevant hotel staff
• Maintained complete knowledge of the kitchen/F&B outlets food storage and food preparation areas
• All other duties as directed by the Director of Food and Beverage
• Work with the Executive Chefs, Executive Sous Chefs, Chef de Cuisines, Sous Chefs, Executive Steward, Outlet Managers to ensure all arrangements and details are dealt with
• Minimize number of customer complaints caused by food borne illness
• Overall maintenance of the operation at a level in keeping with the standards prescribed
